Coffee Origin

This natural process coffee comes from Shakiso in the Guji Zone of Ethiopia's Oromia Region, a remote and heavily forested coffee-growing area known for producing expressive specialty coffees. Guji's mountainous landscape, forested environment, and smallholder coffee-growing traditions have helped establish the region as a distinctive origin within Ethiopia's specialty coffee industry.

For this lot, approximately 137 smallholder farmers delivered ripe coffee cherries to the Shakiso Washing Station during the 2022–23 season. The participating farms averaged approximately two hectares each, reflecting the small-scale farming structure that characterizes much of coffee production in the region.

The remoteness and rugged terrain of Guji contribute to both the region's distinctive environment and the challenges producers face in bringing coffee to market. Shakiso Washing Station provides an important connection between individual smallholder farmers and the broader specialty coffee supply chain.

Natural processing further shapes the character of this Grade 1 Ethiopian coffee by allowing harvested cherries to dry with the fruit intact before the dried fruit is removed from the seed. Combined with the growing conditions of Guji, this process contributes to the concentrated sweetness and fruit expression found in the finished cup.
